Granola

3 cups oats (preferably old-fashioned, but quick will work too)
1/2 -1 cup chopped nuts
1/2 cup coconut (unsweetened, best)
1 tsp. cinnamon

Mix all these in a fairly large bowl.

Then measure out 1/4 cup of honey (you may add a little maple syrup and/or vanilla too, for flavor)

Pour the oat mixture over the honey mixture. Stir until well-coated.

Bake at 250 degrees for about 40 min., stirring every 10 min. so it bakes evenly.

May add dried fruit (1 cup) either before or after baking.

Store in air-tight container.
